우리나라의 발효 식품의 대표, 된장. 발효는 미생물로 하여금 소화하기 쉽고 음식의 보존 기간을 연장할 뿐만 아니라 그 생성물들은 사람의 건강을 증진시키는 효과가 있어요. 우리나라의 전통 된장은 메주를 만들어 1차 발효를 하고, 메주를 소금물에 ‘염지-혼합-숙성'의 과정을 거쳐 된장으로 만들어 다시 발효숙성의 시간을 가져요. 따라서 메주 제조부터 시작하면 최소한 1년 이상이 경과되어야 식품으로서의 가치를 가진 된장으로 탄생해요. 장기 숙성 전통 ‘된장'의 우수성 뿐만 아니라, 된장은 지역적 환경과 만드는 이에 따라 그 맛과 풍미가 달라져요. 청정지역인 전남 장흥에서 한국산 재료들만으로 만든 프롬웰 의 장맛은 그 재료만으로도 특별해요.

Doenjang is one of Korea’s best known fermented food products. The fermentation process uses microbes to make ingredients more digestible and help preserve food for longer periods. In all, fermented products improve the health of people who consume them on a regular basis.

Korean traditional Doenjang goes through a primary fermenting process, which involves making lumps of fermented soybeans, then a secondary fermenting process, where the fermented soybean lumps are soaked in salty water for a ‘salting-mixing-maturing’ process. To produce Doenjang with any sort of value as a consumable product, it takes at least a year from start to finish.
